Broccoli Quiche


Servings:6 (1 serving = 1- 4x4” square)

Ingredients

1 pound broccoli, broken into florets, stems peeled, sliced, and chopped
4 tbsp flour
2 eggs (low cholesterol - 4 beaten egg whites)
2 cups Viva Low Fat Cottage Cheese
2 oz part skim mozzarella cheese, grated
1/4 cup finely chopped parsley
1 tbsp lemon juice
1/2 tsp basil
1/2 tsp oregano
1/3 cup bread crumbs

Preparation

Steam broccoli till barely done. Whisk flour with eggs. Gently mix everything together except bread crumbs. Coat a 9" x 13" pan with cooking spray. Place mixture in pan, sprinkle with crumbs.

Bake for 35-40 minutes in a 350 degree oven.
